Malt Vinegar
A distinctive aspect of Spinnakers is the on-premise malt vinegar brewery, unique in North America. Traditional oak barrel aging methods integrate with modern technology to produce naturally brewed malt vinegars such as India Pale Ale, Scottish Ale and Barley Wine. Used by the Chef in many innovative kitchen recipes, the vinegars are available in our online shop and Provisions, Spinnakers on-site specialty bakery, deli and retail store.
In 1996 Paul Hadfield provided the framework from which the vinegar could be crafted and Jim Pryor implemented the technology. Collectively they have scaled up ancient processes resulting in a pure, full bodied, craft brewed Malt Vinegar. European and Asian countries have used vinegar through the years, made from varying base ingredients and employed diversely. A robust, full flavoured beer such as Spinnakers' Jamesons Scottish Ale, is the foundation for such a definitive taste in this Malt Vinegar; one that offers a mouth-feel of softness and bittersweet. This precious blend of malts, barley, yeast, water and hops is brought to a particular alcohol level to encourage bacteria growth. The vinegar, which is essentially an acetic acid conversion from alcohol, is nurtured and monitored to ensure it has the appropriate conditions. It is aged over several months in French oak barrels to provide a soft, round finish. Spinnakers Scottish Ale Malt Vinegar is used in our Hot and Sour soup, marinated Octopus Ceviche, Cranberry Chutney, Whole Grain Mustard, among other aromatic sauces and marinades. A splash is always suggested on the wedge cut fries and is served in the Restaurant and Taproom. This vinegar is also perfect for pickling in larger quantities upon request. It is 5.5% total acidity by volume in 200ml bottles and is available for purchase in our Provisions retail store. Cheers to the ale that made you pucker!
